Recipes!!!

Hope I'm doing this right! I wanted to be able to post individual recipes as I come up with them. Right now this just looks like one big box. Hmmmm. Work in progress.

I grew up learning to cook with my mom, and by the time I was 12 I could make awesome Snickerdoodle cookies all on my own.  I had all the kids cookbooks, and I really liked helping her out. Then, high school and college happened and my mad cooking skills got sidelined. Now, between having a lot of free time on my hands and being a semi-adult who believes that cooking would be a valuable life skill to learn, I've been doing a pretty good job of teaching myself! I find cooking to be fairly relaxing (unless the recipe is extremely involved), it gives me a sense of accomplishment, and let's be honest, it's a good way to impress the men in my life! So, three cheers for cooking!!! LET'S GET STARTED!!!

My general methodology: find a recipe online, make some modifications based on reviews, make it, and if I like it, write it down as is. Otherwise, keep trying until I get it right. After 5 tries and no base recipe, I have almost recreated the Penne Rosa from Noodles. That is one recipe I won't share. But here are some others that are up for grabs!

Ridiculously Easy Chicken Pot Pie-adapted from Campbell's pot pie recipe on allrecipes.com
-1 can (10.75 ounces) Campbell's Condensed Cream of Chicken Soup
-1 can (10.75 ounces) Campbell's Condensed Cream of Potato Soup
-1 can (9-13 ounces) chicken breast chunks (like tuna, only chicken! This makes everything so easy because you don't have to cook the chicken first!)
-8-10 ounces frozen mixed vegetables, THAWED (I just use about half of a pound-size bag)
-2 refrigerated pie crusts
-season with salt, pepper, garlic salt, and my favorite, Garlic and Herb Mrs. Dash. (teal lid, I use it in a ridiculous amount of things!)
***Pie Plate (you would think this is obvious, but we almost forgot this last time we made it!)

1) Preheat oven to 400 degrees
2) Following directions on pie crusts, put bottom crust in pie plate
3) In a medium-sized bowl, combine soup, chicken, and vegetables. Season liberally. There's nothing in here that's raw, so feel free to taste to make sure it's seasoned enough!
4) Dump the soup mixture into the pie plate
5) Follow directions to cover with the top pie crust. Make sure to cut a pretty ventilation pattern in the top with a butter knife.
6) Bake for 30 minutes
7) Eat! See, you just made some real food! A perfect comfort food to brighten up a crummy day or impress your significant other! Even my mom was impressed! Mmmmm!
